Tarragon-Crusted Chicken

1/4 c. dry breadcrumbs |
2 Tbsp. minced fresh parsley |
1 Tbsp. minced fresh tarragon or 1 tsp. dried tarragon |
1 tsp. grated lemon peel |
1/4 tsp. lemon pepper seasoning |
1/8 tsp. salt |
1/8 tsp. garlic powder |
2 Tbsp. fresh lemon juice |
1 tsp. olive oil |
2 boneless skinless chicken breast halves (5 oz. each) |
Directions:
1. In a shallow bowl, combine the first seven ingredients. In another bowl, combine lemon juice and oil.
2. Dip chicken in lemon juice mixture, then crumb mixture.
3. In a small skillet coated with cooking spray, cook chicken over medium heat for 4-5 min. on each side or until juices run clear.
